Heritage Cheddar

Only the rich milk of our Guernsey herd could produce this award-winning cheese. If you pay attention, we think you can taste the unique Niagara Escarpment terroir.

After we separate the curds from the whey, we wrap then press each wheel in cloth-lined molds. Aged for a minimum of eight months in our temperature and humidity-controlled cheese cave. Heritage Cheddar is mature for its age; buttery and earthy, with that classic aged cheddar sharpness, subtle notes of pineapple, and a delightful crumble.

Oh, and about that award; Heritage Cheddar took Second Place at the 2020 Royal Agricultural Winter Fair in the Mild Cheddar – aged up to 3 Months category.


PAIRING RECOMMENDATIONS

Pour a glass of VQA Ontario Riesling – any will complement from bone dry to late-harvest sweet. A Tawny Port, Belgian Tripel or nut-brown ale will go nicely too.

On a cheeseboard serve at room temperature with fresh apple wedges, Black Forest ham and crabapple jelly, oatcakes or even oatmeal raisin cookies, and of course, a nice thick wedge atop a slice of warm apple pie is perfection.

IN RECIPES

Use Heritage Cheddar in a beef, ale and cheese pie or stew; bake it into breads and pastries; a few slices will take a classic grilled cheese up several notches.
