Ricotta Blueberry Pancakes

INGREDIENTS

  • 2 cups of pancake mix

  • 1 cup of milk

  • 1 cup of water

  • 1 cup of Ricotta cheese

  • 1 cup of blueberries

  1. In a bowl combine pancake mix, milk and water until smooth.

  2. Fold in Ricotta cheese and blueberries.

  3. Pour one spoonful of batter on a hot griddle that has been sprayed with vegetable oil. Cook each side until lightly browned.

  4. Serve with whip cream and maple syrup. Enjoy and toast in the new year with your family!
