Caprese Sandwich Kebabs

These Caprese Sandwich Kebabs featuring our Guernsey Girl cheese are fun to eat and ready in under an hour!

Caprese Sandwich Kebabs

INGREDIENTS

DRESSING

  • 1 small garlic clove , minced

  • 1/2 tsp Dijon mustard 

  • 2.5 tbsp extra virgin olive oil

  • 1 tbsp white wine vinegar 

  • 1/4 tsp dried oregano

  • 1/4 tsp dried parsley

  • 1/2 tsp salt

  • Black pepper

GARLIC OIL

  • ⅓ cup extra-virgin olive oil

  • 3 garlic cloves, thinly sliced

SKEWERS

  • 3 cups Guernsey Girl cheese, cubed

  • 3 cups sourdough bread, cubed

  • 4 cups cherry tomatoes

  • ¾ cup basil leaves

GARNISH

  • 2 tbsp Balsamic glaze (store-bought)

1. Combine the oil and garlic and heat gently over medium-low heat for 2 to 3 minutes. Let cool completely and then remove the garlic from the oil.

2. Place dressing ingredients in a jar and shake very well. Adjust to taste.

3. Thread the Guernsey Girl cheese, bread and tomatoes onto skewers and brush each skewer with garlic oil. Repeat until all the skewers are assembled.

4. Grill on a preheated grill or grill pan until nicely charred on both sides, 2 to 3 minutes per side.

5. Add a few basil leaves to the end of each skewer and then roughly chop the remaining basil and garnish the skewers with the chopped basil.

6. Serve the skewers immediately, drizzled with balsamic glaze and dressing.
