Jordan Station Black Bean Breakfast Burritos 

These can be made ahead and heated for a minute or two in the microwave. A great recipe for rushed mornings!  

Ingredients: 

  • 8 eggs 

  • Salt and freshly ground pepper to taste 

  • Olive oil 

  • ½ yellow onion, finely chopped 

  • 1 red bell pepper, diced

  • ½ jalapeno, seeded and finely chopped 

  • 1 can black beans, drained, rinsed, and lightly mashed with a fork 

  • ¼  water 

  • 1 tbsp Rosewood Wildflower honey 

  • ¼ smoked paprika 

  • 1 tbsp finely chopped oregano 

  • 1 ½ cups shredded Jordan Station Cheese 

  • 10 medium tortillas 

Directions: 

  1. In a bowl, whisk eggs and season with salt and pepper. 

  1. Heat olive oil in a large non-stick pan. Pour in eggs and cook, whisking constantly, until lightly scrambled. Set aside. 

  1. In a large pan, heat some more olive oil and cook the onion, red pepper, and jalapeno until soft, about 5 minutes. Add the black beans, water, honey, smoked paprika, and oregano. Season generously with salt and pepper. Cook for 5 more minutes. 

  1. Stir in ½ cup of the shredded cheese and set aside. 

  1. Lay out the tortillas on a flat surface and top with the eggs, bean mixture, and the rest pf the shredded cheese. 

  1. Roll up the tortillas, wrap them individually in plastic wrap and put them in the freezer. 

  1. To serve, unwrap and heat for a minute or two in the microwave.
